Seaweed Multi-grain Bowl

This is a simple yet nutritious lunch to make at home, that takes all of 10 minutes. Pre-cook the seaweed paste and you can store it in the fridge for a good 3 to 4 weeks. Add your favourite seeds and nuts to make this even more nutritious and tasty! 


Ingredients: 
-1 cup of your favourite grains cooked
-1 handful of lotus Seeds - de-cored and boiled for 2 mins
-4 to 5 pcs x Kombu - gently wiped
-3 tbsp soya sauce
-2 tbsp mirin
-2 tbsp vinegar
-1 tbsp sugar
-1 pinch of salt
-water for boiling 

Directions: 
-Boil rice in the rice cooker 
-Boil lotus seeds separately for 2 mins until slightly bouncy
-Boil kombu and seasonings in a small pot of water enough to cover kombu for 20 - 30 mins
-When cooled, blend Kombu and 1 cup of liquid into pulp, store in glass jar 
-Serve rice and lotus seeds with a spoonful of kombu paste
